WIAW – Quick and Easy Meals with Tessemaes

Hope you’re all having a great week so far!

Life with a newborn has been an adjustment from the way life used to be.  On most days before Little Squish, I was able to make us a full breakfast, pack snacks to go do whatever we needed to do, come home to make a full lunch, and then cook a full dinner most nights.

Now most my time is spent holding the baby, nursing the baby, and changing the baby.  What time I’m not spending on those things, I’m trying to spend on The Love Nugget.  Which leaves me with very little time to cook meals like I used to.  So now more than ever meal prep is so essential for me.  I’ve been making sure to spend a little time over the weekends to prep some food for the week.  It helps SO much when I have something I can quickly grab and eat immediately or re-heat and eat.

For this weeks WIAW I thought I’d share some of my go to quick meals I’ve been enjoying lately.  

Breakfast – First thing in the morning I’ve been drinking 1/2 a juice and eating a hard-boiled egg.

Snack – Most mornings I whip up a shake mid-morning.

Lunch – Lately lunch has been a very fast meal.  Little Squish is either wanting to eat, wants to be held, or The Love Nugget is needing lunch.  So of course I’m last on the list… Which is why it’s been a lifesaver to have something like a quick salad already prepared.  On Sunday we grilled some chicken and I put together several simple salads with spinach, beets, tomatoes, blueberries and grilled chicken.

What’s made them even better is having a healthy dressing to just pour over.  I typically just make my own dressings but with no time lately, I’ve been using Tessemae’s dressings instead.  In fact, Tessemae’s is as close to what you would make in your own kitchen… just already done.

So extremely helpful and always a staple in our house.  Especially since Tessemae’s makes 25 different dressings, marinades, and condiments – offerings are USDA organic certified, Whole30 approved, and contain no added sugar, thickeners, or additives – unlike most salad dressings on the market.

We use them to marinade foods for the grill, to pour over steamed veggies, mixed with plain yogurt for dips and of course, pouring over fresh salads.

Snack – I’ve been craving veggies lately so again make sure to prep some for quick, grab and go snacks to eat on their own or with a dip.

Dinner – Luckily we’ve had some meals dropped off from friends and some that I froze before baby arrived.  This particular evening we had a delicious meal made by a friend.
